Signing up for a slot to bring morning snack to our church Sunday School Class was stress-inducing when my mornings were already filled with scrambling to get two toddlers ready and out the door. Stopping for the classic contributions like donuts or cookies seemed like it was so overdone and I wanted to deliver something I could be proud to share.

And….That’s when I finally got to use this!

Blueberry Breakfast Bake. One morning I was looking at some leftover blueberries from a bulk purchase at the local produce auction and I knew if I didn’t use them they were going to be wasted. That’s what drove me to search online for recipes using fresh berries. I knew I had to try it out and to my amazement as a complete amateur breakfast baker, it turned out so amazing!

Instructions:

Preheat your over to 375 degrees Fahrenheit. Start by combining your dry ingredients- flour, baking powder, cinnamon, sugar, and salt in a large mixing bowl. One thing I love is that you can totally just hand mix this recipe and it blends so well!

Next add in your wet ingredients to the mixture so they are well combined. Finally, toss in those fresh blueberries or substitute in another fruit like diced strawberries or peaches, and pour into a greased casserole dish.

Bake for 45-50 minutes or until a toothpick can be inserted and comes up clean. By this time, your house should smell AMAZING!!

Almost ready to go in the oven!

For some extra decorative flair, sprinkle a little course sugar or powdered sugar across the top of the still-warm bake to give it a real professional look!

Voila! Beautiful, moist, and delicious breakfast!

Blueberry Breakfast Bake

Deliciously moist coffee-cake-like breakfast bake with fresh blueberries.

Total Time 1 hour

Ingredients
  

Dry Ingredients

  • 2 ½ cup Flour
  • 2 ½ teaspoons Baking Powder
  • ¾ teaspoon cinnamon
  • cup sugar
  • ¾ teaspoon salt

Wet Ingredients

  • ¾ teaspoon vanilla extract
  • 5/8 cup butter melted
  • ¾ cup milk
  • 1 egg large

Fruit

  • fresh blueberries

Instructions
 

  • Preheat oven to 375° Fahrenheit.
  • Combine Dry Ingredients in large mixing bowl.
  • Add in wet ingredients and stir combine fully.
  • Add in ¾ of blueberries saving some for later.
  • Pour mixture into greased casserole dish or baking pan. Sprinkle sugar and remaining berries on top.
  • Bake for 45-50 minutes or until a toothpick comes out clean when inserted.

Proper Storage:

Once you have finished indulging you can save the leftovers, if you have any, by storing in an airtight container. Storing at room temperature will be fine for a few days but to extend the life of your bake, make sure to refrigerate. If your bake gets a little dry try reheating it in the microwave with a cup of water next to the plate for about 30 seconds- your bake should regain it’s moisture and taste just as satisfying as that first bite all over again!
